Pork Chops and Apricots

You thought I meant pork chops and applesauce, didn’t you?  Well, I didn’t.  Ok friends, I don’t have a picture for this one.  Last night I was exhausted.  It’s been a super busy week, burning the candle at both ends and yesterday was particularly rough.  When I’m stressed out, I don’t sleep well and yesterday I was wide awake at 4:30am and I’m a firm believer that if I’m awake that early, I might as well be getting some sh*t done.  So I got up, got ready and went to work.  You can imagine that when I shuffled my butt home at 5:30, I was already tired yet still needed to walk the dog, take care of the cats, put away laundry, start gathering stuff to pack for NYC this weekend and whatever else came up. Let me just add that this is exactly the time that I’m glad I’m only cooking for one. Tempted though I was to stop for fast food on the way home, I knew that I had a package of pork chops ready to be cooked in the fridge.  I was not in the mood.  It had to be fast and simple, and I mean really fast and really simple.

So here’s what I did, I fired up the George Foreman grill, plopped down the boneless pork chops, drizzled them with soy sauce and grilled them for about 2-3 minutes.  I had a small amount of organic apricot jam in the fridge, so  I took that out, brushed it on the chops (leaving the thick pieces of fruit where they landed), shut the lid and grilled them for another 2-3 minutes.  They were thin cut chops so they didn’t need much time on the grill.  I steamed up some green beans in the microwave and dinner was ready.  And it was good! Seriously.  And best yet, I have some left over that tonite I’m gonna add to some cooked ramen for another quick but yummy meal.

If you are the kind of person who needs an actual recipe, a quick Google search reveals that there are many with apricots and pork.  Here’s one that looks nearly as easy, with a couple more ingredients.

I’ll be traveling for work the next few weeks and likely not cooking during my brief time at home in between trips.  I’ll try to add some thoughts and images of food on the road, as time allows.
