Tonite’s dinner needed to be quick, simple and satisfying. It’s been a long week already and while I was hungry for good solid food, I just didn’t have the patience to fuss in the kitchen. One of the things I do like about cooking for one is that I don’t need to satisfy anyone else’s needs and wants, but just in case you do, this particular meal meets both the salty and sweet needs, with a bit of crispiness and some snappy greens. It’s light and fun and an easy clean up.
Tropical Strawberry Cream
1 c light vanilla-flavored yogurt
1 1/4 c whole strawberries
1/2 ripe medium banana
6 oz pineapple juice
Put it all together and blend ’til smooth. I have a Magic Bullet (no single woman should be without one) and the large cup was the perfect size for blending these ingredients. Immersion or standard blender would work just as well if you want to do a slightly larger batch. I also think that a touch of pineapple or coconut rum would make this the perfect cocktail mixer.

Lightly toast the muffins under the broiler. Spread mayo, add cheese and meat. Return to broiler for about 3 minutes.
I used Ham and Havarti, two of my favorite sandwich ingredients. This recipe would be perfect with Turkey/Swiss or Roast Beast/Cheddar. I even think if you are a tropical kind a person, a thin ring of pineapple on the ham/havarti one could be delish. Add a side of Sugar Snap Peas.
I also made enough to take a sandwich for lunch tomorrow.
